
Vegan Hummus Sandwich
Veg out with this scrumptious lunch favoite. This combination of healthy veggies and creamy hummus is a delicious treat anyone can enjoy. Nice and filling without the guilt of a heavy lunch. Low in calories and high in taste, this is a sandwich full of freshness.
Ingredients
- 2 whole wheat bread slices
- 2 tablespoon(s) hummus
- 2 cherry tomatoes sliced in half
- 2 cucumber slices, cut in fourths
- 1 kosher dill pickle, sandwich cut
- 1/2 cup(s) romaine lettuce
- 1/4 cup(s) baby spinach
- 1/2 tablespoon(s) red onion, chopped
Instructions
- Toast 2 slices of whole wheat toast and spread hummus on each slicePlace tomatoes, cucumber, pickle, lettuce, spinach, and onions on top of one slice and top with other slice hummus down.
- Cut in half and enjoy.
