Vegan Corn Bread

It’s not corny to go vegan. Enjoy flavor and stay healthy at the same time with this unadultered, animal-free cornbread. Spice it up with a face-free jalapeno as well.

Ingredients
  

  • 1 cup(s) flour
  • 1 cup(s) cornmeal
  • 1/3 cup(s) sugar
  • 2 teaspoon(s) baking powder
  • 1/4 teaspoon(s) salt
  • 1/4 cup(s) unsweetened applesauce
  • 1/3 cup(s) canola oil
  • 1 cup(s) almond milk, unsweetened and unflavored
  • 1/4 cup(s) frozen sweet corn
  • 1 chili pepper, finely chopped

Instructions
 

  • Preheat oven to 400 degrees.
  • Grease a 8 X 8-inch baking pan with oil.
  • In a large bowl, mix flour, cornmeal, sugar, baking powder, and salt.
  • In a separate bowl, mix applesauce with oil.
  • Then whisk in almond milk until completely mixed.
  • Add wet mixture to dry mixture and stir until just combined.
  • Add chili pepper and corn, fold into batter.
  • Pour and spread batter into the baking sheet and bake until golden and lightly browned, about 30 to 35 minutes.
  • Place a toothpick in the center, once it comes out clean, the bread is done baking.
  • Let cool, serve and enjoy!.
