Vegan Cauliflower Mash

Do the mash! The cauliflower mash — it’s a great way to get that mashed potato taste without mashed potato calories and carbs.

Ingredients
  

  • 1 medium cauliflower head, cut into florets
  • 4 tablespoon(s) Tofutti Sour Supreme
  • 3 tablespoon(s) margarine
  • 2 tablespoon(s) green onions, chopped
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste

Instructions
 

  • Boil 1.
  • 5 quarts of salted water in a large pot.
  • Add cauliflower and cook until tender, about 15 minutes.
  • Drain the colander, and remove excess water by pressing down on the florets with the lid of the pot.
  • Bring cauliflower to pot again.
  • Add imitation sour cream and margarine and mix with hand mixer until smooth.
  • Add salt and pepper to taste.
  • Add chopped chives to garnish the top.
  • Serve warm.
