
Terrific Tex-Mex Tofu Burritos

Ingredients
- 8 flour tortillas
- 1 tablespoon(s) extra virgin olive oil
- 3 teaspoon(s) lime juice
- 3 teaspoon(s) fresh ginger, chopped
- 6 teaspoon(s) garlic, chopped
- 1/2 cup(s) cilantro, chopped
- 2 tablespoon(s) shallots, chopped
- 1 teaspoon(s) fresh ground pepper
- 1/8 teaspoon(s) cayenne pepper
- 2 teaspoon(s) cider vinegar
- 1 package extra-firm light tofu, drained and cut into 1/2-inch cubes
- 1 avocado, peeled and mashed
- 1 tomato, chopped
Instructions
- Preheat oven to 250 F.
- Place tortillas in oven and warm for 10 minutes.
- In a medium bowl place tofu and add 1 tablespoon lime juice, ginger, garlic, cilantro, shallots, black pepper, vinegar and cayenne pepper.
- Set aside.
- In a small bowl, combine the avocado and tomato with a dash of juice.
- In a medium skillet, heat the oil over a medium heat and add the tofu.
- Spread the warmed tortillas with avocado and fill with the tofu.
- Roll up the tortilla and serve with chopped tomato.
