Super Spinach, Kale and Quinoa Salad

Ingredients
  

  • 1 cup(s) quinoa
  • 1/8 teaspoon(s) sea salt
  • 1/2 cup(s) slivered almonds
  • 1 garlic clove
  • 3 cup(s) baby spinach
  • 3 cup(s) kale
  • 4 ounce(s) shaved fennel
  • 1/4 cup(s) basil
  • 1/4 cup(s) lemon juice
  • 4 tablespoon(s) extra virgin olive oil
  • 1 dash(es) pepper

Instructions
 

  • Measure 1 cup of quinoa and place into a fine-mesh strainer.
  • Rinse thoroughly with cool water for about 2 minutes.
  • Rub and swish the quinoa with your hand while rinsing.
  • Drain and transfer to a medium saucepan.
  • Stir in broth and the salt.
  • Bring to a rolling boil.
  • Lower heat and cover.
  • Cook until water is absorbed, about 15 minutes.
  • Let sit, covered for 10 minutes.
  • Set aside and allow to cool for 5 minutes.
  • Add almond slices, garlic, spinach, kale, fennel, basil, lemon juice, oil and pepper.
  • Toss to combine.
  • Serve warm.
