
Super Sloppy Joes
Sometimes there’s nothing wrong with a little sloppiness, especially when you’re talking about these mouthwatering sandwiches. Mustard up the courage to make this a permanent part of your recipe repertoire.
Ingredients
- 2 garlic, cloves
- 1 onion, diced
- 1 teaspoon(s) extra virgin olive oil
- 1 cup(s) red pepper, chopped
- 1 carrots, peeled and shredded
- 8 ounce(s) extra lean ground beef
- 1/2 teaspoon(s) garlic powder
- 1 teaspoon(s) prepared yellow mustard
- 1/3 tablespoon(s) ketchup
- 1/2 tablespoon(s) maple syrup
- 4 whole wheat hamburger buns
- 1 avocado, sliced
Instructions
- In a medium skillet over medium heat oil and add the garlic, onion, red pepper, carrots to the skillet and cook until the vegetables are tender, about 4 minutes.
- Set aside.
- Next add the ground beef and cook with the lid on until browned.
- Drain any fat from the pan.
- Stir in the garlic powder, mustard, ketchup, and maple syrup.
- Add the vegetables and stir to combine.
- Reduce heat to medium and cover.
- Let cook for about 20 minutes.
- Serve on whole wheat buns.
- Top with avocado slices.
