
Super Savory Vegetarian Scones
Moist, tender and simply irresistible, these vegetarian scones are superb. Take a second to enjoy these scones. The little cakes are perfect for breakfast, snack or a late-night treat.
Ingredients
- 2 cup(s) whole wheat flour
- 2 teaspoon(s) baking powder
- 1/2 teaspoon(s) salt
- 4 tablespoon(s) soy margarine
- 8 tablespoon(s) egg whites
- 3/4 cup(s) canned coconut milk
- 1 tablespoon(s) lemon juice
- 1 tablespoon(s) chopped fresh dill
Instructions
- Preheat oven to 425 degrees F.
- Combine flour, baking powder, and salt in large bowl.
- Add soy margarine and mix well.
- Add egg whites, coconut milk, lemon juice and dill.
- Mix well.
- Stir mixture into flour mixture until it forms soft dough that pulls away from side of bowl.
- Turn out dough onto floured surface.
- Knead dough.
- Roll out dough into rectangle using rolling pin.
- Cut dough into 6 squares.
- Cut each square diagonally in half, making 12 triangles.
- Place triangle onto baking sheets.
- Bake until golden brown.
- Approx.
- 15 minutes.
- Allow to cool for 10 minutes and serve.
