Spinach and Feta Puff Pastry

Pastries and healthy eating don’t actually make for strange bedfellows. Enjoy this puff pastry that is actually a sensible dish. Filled with spinach, feta, garlic and a handful of other ingredients, these make for a sensible snack or a mouthwatering meal.

Ingredients
  

  • 1 1/4 cup(s) frozen spinach
  • 1/2 cup(s) firm feta cheese, crumbled
  • 1/2 teaspoon(s) Fresh ground pepper
  • 1/8 teaspoon(s) nutmeg
  • 1/3 tablespoon(s) dill, chopped
  • 1 teaspoon(s) garlic, minced
  • 1 puff pastry package (10 X 9.5 inch)

Instructions
 

  • Press 2 cloves of garlic.
  • Preheat the oven to 375 degrees F.
  • Thaw frozen spinach according to package direction.
  • Drain spinach, squeezing the excess liquid from it.
  • In a bowl, mix the spinach, feta, garlic, pepper, dill and nutmeg together.
  • Flour a clean, dry flat area.
  • Lay out the puff pastry on the floured surface.
  • Flour the top of the dough.
  • Roll out the puff pastry until it is half as thick and about 24 by 12 inches.
  • Cut into 3-inch squares trimming if necessary.
  • There should be about 32 squares when done.
  • Flour and stack and set aside for later.
  • Fill a bowl with some luke warm water.
  • Place a couple teaspoons of filling in the top half of the square.
  • Dip a finger into the water and moisten the edges of the top half with water.
  • Fold the bottom half over to the edges of the top half.
  • Use a fork to seal the edges.
  • Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy.
  • Serve warm.
