
Spinach and Feta Puff Pastry
Pastries and healthy eating don’t actually make for strange bedfellows. Enjoy this puff pastry that is actually a sensible dish. Filled with spinach, feta, garlic and a handful of other ingredients, these make for a sensible snack or a mouthwatering meal.
Ingredients
- 1 1/4 cup(s) frozen spinach
- 1/2 cup(s) firm feta cheese, crumbled
- 1/2 teaspoon(s) Fresh ground pepper
- 1/8 teaspoon(s) nutmeg
- 1/3 tablespoon(s) dill, chopped
- 1 teaspoon(s) garlic, minced
- 1 puff pastry package (10 X 9.5 inch)
Instructions
- Press 2 cloves of garlic.
- Preheat the oven to 375 degrees F.
- Thaw frozen spinach according to package direction.
- Drain spinach, squeezing the excess liquid from it.
- In a bowl, mix the spinach, feta, garlic, pepper, dill and nutmeg together.
- Flour a clean, dry flat area.
- Lay out the puff pastry on the floured surface.
- Flour the top of the dough.
- Roll out the puff pastry until it is half as thick and about 24 by 12 inches.
- Cut into 3-inch squares trimming if necessary.
- There should be about 32 squares when done.
- Flour and stack and set aside for later.
- Fill a bowl with some luke warm water.
- Place a couple teaspoons of filling in the top half of the square.
- Dip a finger into the water and moisten the edges of the top half with water.
- Fold the bottom half over to the edges of the top half.
- Use a fork to seal the edges.
- Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy.
- Serve warm.
