
Perfect Pasta Frittata

Ingredients
- 1 onion, chopped
- 1 tablespoon(s) extra virgin olive oil
- 1/4 cup(s) unsweetened almond milk
- 1 1/2 cup(s) Egg Beaters
- 8 ounce(s) spaghetti, cooked
- 1 dash(es) salt
- 1 dash(es) pepper
- 2 ounce(s) reduced fat swiss cheese, grated
- 1/2 cup(s) broccoli, cooked
- 1 tablespoon(s) parsley
- 1/2 cup(s) marinara sauce
Instructions
- Preheat the oven to 350 F.
- Heat oil in 10-inch skillet over medium heat.
- Saute the onion for about 2 minutes.
- In a bowl, whisk together Egg Beaters, milk, salt and pepper.
- Add the pasta, cheese, and broccoli into the eggs and pour into the skillet.
- Bake for 25 minutes until semi-set.
- Sprinkle with parsley.
- Let cool for 5 minutes, then serve with a dollop of marinara sauce.
