Ingredients
  

  • 1 onion, chopped
  • 1 tablespoon(s) extra virgin olive oil
  • 1/4 cup(s) unsweetened almond milk
  • 1 1/2 cup(s) Egg Beaters
  • 8 ounce(s) spaghetti, cooked
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 2 ounce(s) reduced fat swiss cheese, grated
  • 1/2 cup(s) broccoli, cooked
  • 1 tablespoon(s) parsley
  • 1/2 cup(s) marinara sauce

Instructions
 

  • Preheat the oven to 350 F.
  • Heat oil in 10-inch skillet over medium heat.
  • Saute the onion for about 2 minutes.
  • In a bowl, whisk together Egg Beaters, milk, salt and pepper.
  • Add the pasta, cheese, and broccoli into the eggs and pour into the skillet.
  • Bake for 25 minutes until semi-set.
  • Sprinkle with parsley.
  • Let cool for 5 minutes, then serve with a dollop of marinara sauce.
