Ingredients
  

  • 12 ounces box pasta of choice
  • 3 tablespoons olive oil
  • 3 cups broccoli florets
  • 2 small red pepper cut into strips
  • 1 cups vegetable broth
  • 2 cups chicken breast
  • 2 tablespoons margarine
  • 2 tablespoons flour
  • 1/2 cup 1% milk
  • 1 cup(s) low-fat shredded cheddar

Instructions
 

  • Heat oil in large skillet over medium heat.
  • Add chicken and lightly brown about 3-5 minutes.
  • Remove chicken; add broccoli, peppers and broth.
  • Cover and cook until broccoli is bright and tender.
  • Return chicken to skillet for 1 more minute then remove pan from heat.
  • Melt butter in a medium saucepan and add flour slowly, stirring frequently.
  • Whisk in milk and allow to thicken.
  • Fold in cheese.
  • Mix all ingredients until smooth and blended well.
  • Serve.
