Light Cheddar Cheese Grits

Kiss my grits! The cheesy grits are as delicious as they are healthy. Serve as a side or eat as a breakfast.

Ingredients
  

  • 1 tablespoon(s) light unsalted butter
  • 3/4 cup(s) egg substitute
  • 1 cup(s) low fat milk
  • 3/4 cup(s) organic grits
  • 2 cup(s) light grated sharp cheddar cheese
  • 1/4 teaspoon(s) freshly ground black pepper

Instructions
 

  • Preheat oven to 325 degrees Fahrenheit.
  • Use light unsalted butter to butter a 2-quart baking dish.
  • In a medium bowl, whisk the egg substitutes and low-fat milk until blended.
  • In a heavy saucepan over medium-high heat, bring 2 cups of salted water to a boil.
  • Slowly stir in the grits.
  • Reduce the heat to low, cover and cook, stirring frequently until the grits are soft and the water is absorbed, can take about 20 minutes.
  • Drop the heat as needed keeping the grits at a gentle cook.
  • The grits will thicken.
  • Place the grits into a bowl, add the egg mixture and stir until blended, about 2 minutes.
  • Keep some small lumps.
  • stir in 1.
  • 5 cups of grated light cheddar cheese and season some pepper.
  • Using a spatula, pour in the prepared grits into the buttered baking dish.
  • Sprinkle the remaining grated cheese on top.
  • Bake until the edges brown and the center is set.
  • It will take about 55 minutes.
  • Remove and serve.
