
Light Cheddar Cheese Grits
Kiss my grits! The cheesy grits are as delicious as they are healthy. Serve as a side or eat as a breakfast.
Ingredients
- 1 tablespoon(s) light unsalted butter
- 3/4 cup(s) egg substitute
- 1 cup(s) low fat milk
- 3/4 cup(s) organic grits
- 2 cup(s) light grated sharp cheddar cheese
- 1/4 teaspoon(s) freshly ground black pepper
Instructions
- Preheat oven to 325 degrees Fahrenheit.
- Use light unsalted butter to butter a 2-quart baking dish.
- In a medium bowl, whisk the egg substitutes and low-fat milk until blended.
- In a heavy saucepan over medium-high heat, bring 2 cups of salted water to a boil.
- Slowly stir in the grits.
- Reduce the heat to low, cover and cook, stirring frequently until the grits are soft and the water is absorbed, can take about 20 minutes.
- Drop the heat as needed keeping the grits at a gentle cook.
- The grits will thicken.
- Place the grits into a bowl, add the egg mixture and stir until blended, about 2 minutes.
- Keep some small lumps.
- stir in 1.
- 5 cups of grated light cheddar cheese and season some pepper.
- Using a spatula, pour in the prepared grits into the buttered baking dish.
- Sprinkle the remaining grated cheese on top.
- Bake until the edges brown and the center is set.
- It will take about 55 minutes.
- Remove and serve.
