Kickin’ Sweet Potato Fries

Sweet news — you can indulge in fries and still follow a healthy eating regimen. A modified version of everybody’s favorite side, these sweet potato fries have so much appeal it’s not even funny.

Ingredients
  

  • 5 sweet potatoes
  • 2 egg whites
  • 2 teaspoon(s) garlic powder
  • 1 teaspoon(s) paprika
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) pepper
  • 1 teaspoon(s) chili powder
  • 1 cup(s) panko bread crumbs
  • 1 cooking spray

Instructions
 

  • Preheat oven to 450 F.
  • Bring a large pot of water to a boil.
  • Place potatoes in boiling water and cook for 5 minutes.
  • Drain and plunge into a bowl of ice water.
  • Dry the potatoes well.
  • Slice potatoes into 1/4-inch-thick matchstick slices.
  • In a medium sized bowl, combine egg white, garlic powder, paprika, salt, pepper and chili powder.
  • Toss potato slices with egg white mixture and then dip them in panko bread crumbs.
  • Spray a large baking sheet with cooking spray.
  • Lay the sweet potatoes on the baking sheet.
  • Bake for 12 minutes.
  • Turn them once and bake for 8 more minutes until tender.
  • Serve warm.
