
Kickin’ Sweet Potato Fries
Sweet news — you can indulge in fries and still follow a healthy eating regimen. A modified version of everybody’s favorite side, these sweet potato fries have so much appeal it’s not even funny.
Ingredients
- 5 sweet potatoes
- 2 egg whites
- 2 teaspoon(s) garlic powder
- 1 teaspoon(s) paprika
- 1 teaspoon(s) salt
- 1 teaspoon(s) pepper
- 1 teaspoon(s) chili powder
- 1 cup(s) panko bread crumbs
- 1 cooking spray
Instructions
- Preheat oven to 450 F.
- Bring a large pot of water to a boil.
- Place potatoes in boiling water and cook for 5 minutes.
- Drain and plunge into a bowl of ice water.
- Dry the potatoes well.
- Slice potatoes into 1/4-inch-thick matchstick slices.
- In a medium sized bowl, combine egg white, garlic powder, paprika, salt, pepper and chili powder.
- Toss potato slices with egg white mixture and then dip them in panko bread crumbs.
- Spray a large baking sheet with cooking spray.
- Lay the sweet potatoes on the baking sheet.
- Bake for 12 minutes.
- Turn them once and bake for 8 more minutes until tender.
- Serve warm.
