
Kickin’ Collard Greens
The heat is on with these healthy greens. Invite some other veggies to the party, add some kick and you’re good to go. Fun for all ages.
Ingredients
- 1 tablespoon(s) extra virgin olive oil
- 8 ounce(s) mushrooms, sliced
- 1 onions, sliced
- 2 1/2 garlic, cloves
- 16 ounce(s) collard greens, cut into 2-inch pieces
- 1 cup(s) vegetable broth
- 1 dash(es) salt
- 1 dash(es) pepper
- 1 teaspoon(s) paprika
- 1 teaspoon(s) Tabasco sauce
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the mushrooms, and cook for 5 minutes.
- Add the onion, and cook until tender, about 5 minutes more.
- Add the garlic and cook for 2 minutes more.
- Add the collard greens, and fry until they start to wilt.
- Pour in vegetable broth, and season with salt, pepper and paprika.
- Reduce heat to low, and simmer for 40 to 45 minutes.
- Take the collard greens off the heat and add the Tabasco sauce.
- Heat the olive oil in a large pot over medium-high heat.
- Add the mushrooms, and cook for 5 minutes.

- Add the collard greens, and fry until they start to wilt.
- Pour in vegetable broth, and season with salt, pepper and paprika.

- Take the collard greens off the heat and add the tabasco sauce.
