
Herb Couscous Salad
Couscous is a grain with a funny name but big taste and nutrition. This light side dish is perfect paired with your favorite entree. This fresh salad is second to none.
Ingredients
- 2 cup(s) whole wheat couscous, uncooked
- 1/4 cup(s) chopped walnuts
- 1/2 teaspoon(s) salt
- 24 floz boiling water
- 1 large tomato
- 1 medium cucumber
- 2 tablespoon(s) chives, chopped
- 2 tablespoon(s) fresh parsley, chopped
- 2 tablespoon(s) fresh basil, chopped
- 2 tablespoon(s) fresh thyme, chopped
- 4 tablespoon(s) fresh mint
- 1/4 cup(s) lemon juice
- 1/4 cup(s) olive oil
- 1/2 teaspoon(s) garlic, minced
Instructions
- In a large bowl, stir couscous, walnuts, and salt.
- Pour boiling water over couscous and stir to combine.
- Let cool for about 15 minutes.
- Chop the tomato.
- Then peel and seed, and chop the cucumber.
- Add the cooled couscous with the rest of the ingredients.
- Stir until well combined.
- Serve and enjoy.
