Ingredients
  

  • 1/4 cup(s) fat- free reduced sodium chicken broth
  • 2 tablespoon(s) red wine vinegar
  • 1 teaspoon(s) sugars, granulated
  • 1 teaspoon(s) dried oregano
  • 3/4 cup(s) olive oil
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 16 ounce(s) ( 4 oz each ) boneless skinless chicken breast halves
  • 1 cooking spray
  • 6 cup(s) fresh romaine Lettuce, Chopped
  • 3/4 cup(s) cherry tomatoes, halved
  • 1/2 cup(s) red onions, thinly sliced
  • 1/2 cup(s) cucumbers, peeled and sliced
  • 1 cup(s) fat free crumbled feta cheese
  • 16 black olives, pitted
  • 2 tablespoon(s) scallions, chopped
  • 1/2 tablespoon(s) dried basil
  • 3 teaspoon(s) garlic, finely chopped
  • 1 teaspoon(s) thyme
  • 1/8 teaspoon(s) cayenne pepper

Instructions
 

  • Prepare grill or broiler.
  • Combine the chicken broth, red wine vinegar, sugar, salt, oregano and olive oil in a small bowl.
  • Brush the chicken with 2 tablespoons dressing; set remaining dressing aside.
  • Place chicken on grill rack or broiler pan coated with cooking spray; cook for 5 minutes on each side or until chicken is done.
  • Cut into 1/4-inch-thick slices.
  • In a large bowl, combine lettuce, tomatoes, onions, cucumbers, feta cheese, olives and scallions.
  • Add remaining dressing, basil, garlic, thyme, black pepper and cayenne pepper.
  • Top with sliced chicken.
  • Serve immediately.
