Ingredients
  

  • 2 cloves garlic, minced
  • 1 small chile pepper, minced
  • 1 medium onion, minced
  • 1 cup(s) zucchini, sliced
  • 3 large carrots, with skin, sliced
  • 8 crimini mushrooms, sliced
  • 1 green bell pepper, chopped
  • 2 tablespoon(s) low sodium soy sauce
  • 1 dash(es) salt
  • 1 dash(es) black pepper
  • 2 tablespoon(s) parsley
  • 12 ounce(s) chicken breast

Instructions
 

  • Chop chicken breasts into 1-to-2 inch cubes.
  • Set aside.
  • In a skillet over medium-high heat, add 2 tablespoons olive oil and saute garlic, chile pepper, and onion until softened.
  • Add chicken cubes and cook until tender.
  • Add zucchini, carrots, mushrooms, green pepper, soy sauce, salt, and black pepper.
  • Cook, until vegetables are tender.
  • Add parsley.
  • Serve.
