
Guacamole Grilled Cheese Sandwich
How do you elevate a classic grilled cheese to the next level? By adding an avocado to the mix. Go gourmet by topping this childhood favorite with some good ole’ guacamole. It is second to none.
Ingredients
- 4 ripe avocados, peeled and seeded
- 2 teaspoon(s) lime juice
- 2 tomatoes, diced
- 1/2 onion, chopped
- 1 dash(es) pepper
- 1 dash(es) salt
- 2 garlic cloves, minced
- 1 cooking spray
- 2 tablespoon(s) butter, divided
- 2 cup(s) reduced fat sharp cheddar cheese, shredded
- 6 whole grain bread slices
Instructions
- Place avocados in a bowl and mash with a fork.
- Mix in lime juice, tomatoes, onion, pepper, salt, and garlic.
- Set aside.
- Spray a large skillet with cooking spray and heat over medium heat.
- Butter one side of each slice of bread, sprinkle half the cheese onto the unbuttered side and add the guacamole spread and sprinkle more cheese.
- Top with remaining slice of bread and butter the outside of this slice as well.
- Grill over medium heat until golden brown and cheese has melted; about 2 minutes on each side.
- Serve hot.
