Ingredients
  

  • 4 ripe avocados, peeled and seeded
  • 2 teaspoon(s) lime juice
  • 2 tomatoes, diced
  • 1/2 onion, chopped
  • 1 dash(es) pepper
  • 1 dash(es) salt
  • 2 garlic cloves, minced
  • 1 cooking spray
  • 2 tablespoon(s) butter, divided
  • 2 cup(s) reduced fat sharp cheddar cheese, shredded
  • 6 whole grain bread slices

Instructions
 

  • Place avocados in a bowl and mash with a fork.
  • Mix in lime juice, tomatoes, onion, pepper, salt, and garlic.
  • Set aside.
  • Spray a large skillet with cooking spray and heat over medium heat.
  • Butter one side of each slice of bread, sprinkle half the cheese onto the unbuttered side and add the guacamole spread and sprinkle more cheese.
  • Top with remaining slice of bread and butter the outside of this slice as well.
  • Grill over medium heat until golden brown and cheese has melted; about 2 minutes on each side.
  • Serve hot.
