Gluten Free Chicken Corn Bites

Ingredients
  

  • 1/2 cup(s) olive oil
  • 2 cup(s) cornmeal
  • 1/4 teaspoon(s) paprika
  • 1/2 teaspoon(s) garlic salt
  • 16 ounce(s) chicken breasts, boneless skinless, cut into strips
  • 2 eggs

Instructions
 

  • In a skillet, warm oil over high heat.
  • In a blender, blend cornmeal until it is a fine flour, add paprika and garlic salt, blend well.
  • Place cornmeal flour mixture in a large gallon sized zip lock baggie.
  • Beat eggs in a bowl and then dip chicken strips in the eggs.
  • Afterwards, place chicken in the baggie, and shake.
  • Fry chicken strips in a skillet until cooked through, about 8-10 minutes.
  • Transfer to a paper towel-lined plate to remove excess oil.
  • Serve and enjoy!.
