Ingredients
  

  • 3 tablespoon(s) maple syrup
  • 3 teaspoon(s) granulated sugar
  • 3 tablespoon(s) teriyaki sauce
  • 1 1/2 floz champagne
  • 1 1/2 tablespoon(s) ginger root, finely grated
  • 1 garlic clove, minced
  • 1 teaspoon(s) sesame oil
  • 1 1/2 teaspoon(s) olive oil
  • 1 dash(es) sea salt
  • 1 dash(es) pepper
  • 2 dolphinfish fillet (mahi-mahi)

Instructions
 

  • Preheat oven to 425 F.
  • Mix maple syrup, sugar, teriyaki sauce, champagne, gingerroot, garlic, sesame oil, olive oil, sea salt, and pepper in a medium bowl and cover dolphin fillets.
  • Marinate fillets for 1 to 2 hours in the refrigerator.
  • In an oven safe skillet heat 1/2 tablespoon of olive oil on medium-high heat.
  • Cook the fillets for 5 to 7 minutes.
  • Transfer the fillets and cook in the oven for 20 minutes.
  • Serve warm.
