Dairy-Free Chocolate Gelato

Ingredients
  

  • 2 ounce(s) bittersweet chocolate
  • 2 1/4 cup(s) almond milk, sweetened
  • 1/3 cup(s) soy cream
  • 3/4 cup(s) sugars, finely granulated
  • 1 cup(s) cocoa powder, unsweetened
  • 4 egg yolks

Instructions
 

  • Coarsely chop chocolateIn a 2-quart sauce pan, bring milk, soy-cream and half the sugar to a simmer.
  • Stir until sugar is dissolved.
  • Remove pan from heat.
  • Stir in cocoa powder and chocolate and stir until all chocolate is melted and smooth.
  • In a water and iced bowl, beat egg yolks and remaining sugar until thick.
  • Add hot chocolate mixture slowly, taking care not to cook eggs, whisk enire time while adding mixture.
  • Cook on low heat, stirring occasionaly until thermometer reads 170 degrees F.
  • Pour mixture through colander and place in an iced bowl and let cool.
  • Allow mixture to cool while coveredFreeze mixture in icecream maker and transfer into airtight container.
  • Allow to harden for 1-3 hours in freezer.
