
Crockpot Minestrone Soup
This hot and hearty soup is sure to warm you to the bone. Chock full of vegetables and nutrients, this palatable potage is great with a side salad or to eat alone. It will fill you up without filling you out.
Ingredients
- 5 cup(s) vegetable broth
- 4 cup(s) crushed tomatoes
- 2 zucchinis, rough chop
- 2 crookneck squash, rough chop
- 2 celery stalk, chopped
- 3 carrots, chopped
- 1 cup(s) cut green beans, frozen
- 1 tablespoon(s) fresh basil, chopped
- 1 teaspoon(s) oregano
- 1 onions, chopped
- 2 garlic cloves, minced
- 1 teaspoon(s) salt
- 1 1/2 cup(s) elbow macaroni
- 1 can red kidney beans
- 2 bay leaves
Instructions
- Chop vegetables and all other ingredients into crock pot except for pasta.
- Cook on low for 6-8 hours.
- Cook on high 30 minutes before serving add pasta.
