Ingredients
  

  • 2 teaspoon(s) salt; divided
  • 2 cup(s) spinach
  • 2 tablespoon(s) light butter
  • 1/4 cup(s) all-purpose flour
  • 1 cup(s) skim milk
  • 1 tablespoon(s) half and half
  • 2 cup(s) onions, chopped
  • 1/8 teaspoon(s) nutmeg
  • 1 teaspoon(s) pepper

Instructions
 

  • Cook spinach in a pot of boiling salt water.
  • Stir constantly, until the spinach is wilted; about 1 to 2 minutes.
  • Drain and rinse under cold water.
  • Squeeze in a paper towel and remove as much moisture as possible.
  • Chop the spinach and set aside.
  • Melt the butter in a saucepan.
  • Stir in the flour to make a paste.
  • Whisk in the milk, and the half-and-half until smooth and cook over high heat for 1 to 2 minutes.
  • Mix in the spinach, onions, nutmeg, salt, and pepper.
  • Cook until it is heated through.
