Cranberry, Apple and Raisin Chutney

Ingredients
  

  • 1 cup(s) raisins
  • 16 floz water
  • 1/3 cup(s) brown sugar
  • 14 3/4 mL sherry
  • 1/2 mL apple, chopped
  • 1/4 cup(s) lemon juice
  • 1 teaspoon(s) ginger, minced
  • 3 cup(s) cranberries
  • 1/2 cup(s) chopped walnuts

Instructions
 

  • Bring water to a boil in a heavy large saucepan.
  • Add raisins.
  • Remove from the heat and let stand for 15 minutes.
  • Drain, reserving 1/2 cup of water.
  • Pour reserved water back into the saucepan and add sugar, sherry and apples.
  • Stir and increase heat to a boil.
  • Cook for 5 minutes.
  • Remove from the heat; stir in lemon juice, and ginger.
  • Add cranberries and cook until they begin to pop, about 8 minutes.
  • Stir in raisins and cook for another 2 minutes.
  • Cover and refrigerate for 8 hours or overnight before serving.
  • Stir in walnuts just before serving.
