
Cooked Carrots
Buggin out because your kids aren’t getting enough fruits and veggies? Put yourself to rest with these gourmet cooked carrots. They are the perfect complement to just about protein.
Ingredients
- 16 ounce(s) carrots, peeled and thinly sliced
- 1 tablespoon(s) extra virgin olive oil
- 1 teaspoon(s) pepper
- 1 teaspoon(s) lemon juice
- 1 teaspoon(s) salt
- 1/2 tablespoon(s) basil
Instructions
- Place carrots, 1/2 tablespoon of olive oil, pepper, lemon juice and salt in a pot of water.
- Bring water to a boil, reduce heat to high and simmer.
- Cook for about 30 minutes.
- Drain the carrotsDrizzle with the remaining olive oil and garnish with basil.
- Serve hot.
