Citrus Skirt Steak

Ingredients
  

  • 3/4 teaspoon(s) fresh ginger, peeled and chopped
  • 2 teaspoon(s) minced garlic
  • 2 floz sake
  • 2 floz orange juice
  • 2 floz lime juice
  • 1/2 teaspoon(s) oregano
  • 2 floz lemon juice
  • 1 dash(es) salt
  • 1/4 teaspoon(s) crushed red pepper
  • 4 skirt steaks
  • 1 tablespoon(s) olive oil

Instructions
 

  • Place the ginger and garlic in a clean cloth and squeeze out all the juice into a bowl.
  • Discard the pulp.
  • Add the sake, orange juice, lime juice, oregano, lemon juice, salt, and crushed red pepper.
  • Set aside and reserve about 1/4 of the liquid in a separate container.
  • Preheat the grill on high and oil grill.
  • Place the steaks in the bowl and marinade for 10 to 15 minutes.
  • Grill the steaks about 2 minutes per side.
  • Transfer the steak to a cutting board and allow to stand for 5 minutes before slicing.
  • Once sliced add the remaining liquid over top of the steaks and serve.
