Chicken and Hummus Panini

Take a trip to the Mediterranean without leaving the comforts of your kitchen. Prepared with chicken, cheese, cucumbers, roasted peppers and more, this is a palate-pleasing panini that can be whipped up with a moment’s notice.

Ingredients
  

  • 8 ounce(s) mushrooms, sliced
  • 2 teaspoon(s) soy sauce
  • 4 slices whole grain bread
  • 1/2 pound(s) chicken breast, sliced thin
  • 4 green onions, chopped into rounds
  • 4 sliced of reduced fat provolone cheese
  • 10 slices cucumber
  • 1/2 cup(s) sliced roasted red pepper
  • 1/2 cup(s) cilantro, chopped
  • 1/4 cup(s) reduced fat crumbled feta cheese
  • 6 tablespoon(s) hummus

Instructions
 

  • Saute the mushrooms on medium heat in a nonstick skillet for about 5 minutes.
  • Season with soy sauce.
  • Spread all 4 pieces of bread with hummus.
  • Layer hummus on two of the four pieces of bread and add slices of chicken, green onions, provolone, cucumber, roasted red pepper and cilantro.
  • Drain mushrooms and place them on top.
  • Add feta cheese and close with reserved pieces of bread.
  • Place sandwiches into the nonstick skillet.
  • Cook for about 3-5 minutes, until toasted on the bottom.
  • Flip sandwiches and then cook the other side in the same way.
  • Paninis should be browned on both sides.
  • Cut each sandwich in half and serve warm.
  • saute.
