Baked Zucchini Fries

French Fries just got healthier. Using zucchini instead of potatoes gives fries an added boost of nutrients. Battered with Parmesan cheese and seasoned bread crumbs, your family may not ever want the traditional fry again.

Ingredients
  

  • 2 zucchini, peeled and cut into 3-inch sticks
  • 1 egg white
  • 1/4 cup(s) low fat milk
  • 1/2 cup(s) Parmesan cheese, shredded
  • 1/2 cup(s) Italian seasoned breadcrumbs
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to tatse
  • 1 cooking spray

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Cut zucchinis into three-inch sticks.
  • In a small bowl, whisk an egg white and milk together.
  • In another bowl, mix Parmesan and seasoned breadcrumbs in another.
  • Take each zucchini stick and dip it into the egg batter, then roll in breadcrumb mixture.
  • Place onto a coated baking sheet.
  • Repeat process with remaining zucchini sticks.
  • Bake for 20-25 minutes, or until golden brown.
  • Remove from oven and season with salt and pepper.
  • Serve and enjoy.
