Ingredients
  

  • 4 ounce(s) boneless, skinless chicken breast, halves
  • 1 cup(s) sliced mushrooms, soaked in water
  • 8 tablespoon(s) egg whites
  • 1 cup(s) bread crumbs
  • 2 tablespoon(s) soft soy margarine, unsalted
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste
  • 1 teaspoon(s) garlic
  • 3/4 cup(s) chicken broth
  • 1/4 cup(s) sliced almonds, lightly toasted
  • 1 cup(s) angel hair pasta
  • 1/10 cup(s) chopped parsley

Instructions
 

  • Preheat oven to 350 degrees F.
  • Place half of the mushrooms in baking pan.
  • Dip the chicken into egg whites and then roll in bread crumbs.
  • In a skillet melt soy margarine and garlic over medium heat.
  • Add salt and pepper to chicken and cook until browned on both sides.
  • Add other half of mushrooms, almonds, broth and pasta.
  • Bake 350 degrees F for 30 minutes.
  • Serve and sprinkle with parsley.
