Ingredients
  

  • 2 cup(s) whole wheat couscous, uncooked
  • 1/4 cup(s) chopped walnuts
  • 1/2 teaspoon(s) salt
  • 24 floz boiling water
  • 1 large tomato
  • 1 medium cucumber
  • 2 tablespoon(s) chives, chopped
  • 2 tablespoon(s) fresh parsley, chopped
  • 2 tablespoon(s) fresh basil, chopped
  • 2 tablespoon(s) fresh thyme, chopped
  • 4 tablespoon(s) fresh mint
  • 1/4 cup(s) lemon juice
  • 1/4 cup(s) olive oil
  • 1/2 teaspoon(s) garlic, minced

Instructions
 

  • In a large bowl, stir couscous, walnuts, and salt.
  • Pour boiling water over couscous and stir to combine.
  • Let cool for about 15 minutes.
  • Chop the tomato.
  • Then peel and seed, and chop the cucumber.
  • Add the cooled couscous with the rest of the ingredients.
  • Stir until well combined.
  • Serve and enjoy.
