Fabulous Lentil and Quinoa

No reason to go gentle on the lentils, especially when it’s combined with a superfood like quinoa. Go big or go home with this dish that’s not just good to eat but good for you.

Ingredients
  

  • 1 cup(s) quinoa
  • 1 cup(s) lentils
  • 1/8 teaspoon(s) bay leaves
  • 2 garlic cloves, minced
  • 1/4 onion
  • 1 red pepper, cored, seeded, and chopped
  • 1 green pepper, cored, seeded and chopped
  • 1/4 cup(s) dates
  • 2 tablespoon(s) soy sauce
  • 1/4 cup(s) orange juice
  • 1/4 cup(s) apple juice
  • 1/2 teaspoon(s) cayenne pepper
  • 1/3 cup(s) almonds
  • 2 tablespoon(s) parsley

Instructions
 

  • Cook quinoa in 2 quarts of water for 10 minutes.
  • Drain and let cool.
  • Put the lentils in a medium saucepan and cover with water.
  • Add bay leaf, garlic, and onion and bring to a boil.
  • Simmer until lentils are tender, about 20 minutes.
  • Drain and set aside.
  • Meanwhile, in a large bowl add bell peppers, dates, soy sauce, orange juice, apple juice and cayenne pepper.
  • Add the quinoa and lentils and toss.
  • Add almonds and sprinkle with parsley.
  • Serve.
