Ingredients
  

  • 1 1/2 cup(s) oat bran
  • 1/2 cup(s) whole-wheat flour
  • 1/3 cup(s) unsweetened applesauce
  • 2 teaspoon(s) baking powder
  • 1 teaspoon(s) ground cinnamon
  • 1/2 teaspoon(s) sea salt
  • 3/4 cup(s) skim milk
  • 4 tablespoon(s) egg whites
  • 1/4 cup(s) unsweetened applesauce
  • 1 3/4 cup(s) peaches, drained and chopped
  • 1/3 cup(s) chopped walnuts
  • 1/4 cooking spray, buttery

Instructions
 

  • Preheat oven to 435 degrees.
  • Combine oat bran, whole-wheat flour, applesauce, baking powder, cinnamon and salt; mix well.
  • Combine milk, egg whites and unsweetened applesauce.
  • Add to previous ingredients; stir together.
  • Add in fruit and nuts to mix.
  • Use cooking spray to grease muffin cups and fill with batter.
  • Bake 20 to 25 minutes or until golden brown.
