Sesame Chicken Fingers with Spicy Peanut Sauce

Ingredients
  

  • 3 floz warm water
  • 16 tablespoon(s) creamy peanut butter
  • 4 tablespoon(s) hoisin sauce
  • 1/4 cup(s) fresh cilantro, chopped
  • 1 garlic clove, minced
  • 1 teaspoon(s) red pepper flakes
  • 3/4 cup(s) sesame seeds
  • 24 ounce(s) fat-free chicken breasts, boneless & skinless, cut into 3/4 inch strips
  • 6 tablespoon(s) vegetable oil

Instructions
 

  • In a medium sized bowl combine water, peanut butter, hoisin, cilantro, garlic and pepper flakes.
  • Mix together well.
  • In a shallow dish, pour sesame seeds.
  • Cut fat off chicken breasts and cut into 3/4-inch strips.
  • Season strips with salt and pepper and dip into the bowl with sesame seeds.
  • Make sure to press firmly so that the seeds stick to the chicken strips.
  • In a large skillet, warm 3 tablespoons of olive oil over medium heat.
  • Place half the chicken strips into the hot oiled skillet and cook until golden brown on each side and cooked all the way through.
  • This should take about 2-3 minutes per side.
  • Repeat with remaining chicken strips, Wipe skillet off and re-warm with oil before cooking next batch.
  • Transfer chicken strips to a paper towel-lined plate to remove excess oil.
  • Serve with dipping sauce.
